In the beta release of iOS 5.1 Apple included some new wallpapers. Apple has included four new wallpapers in iOS 5.1 but they are only showing in the iPad version and not the iPhone one. The four new wallpapers look very similar to what you might expect to see on a Mac desktop but they have been scaled to fit the iPad screen. They have even scaled down some of them to fit the iPhone too which is an added bonus.
